These could be served as a starter or main course and are a flavourful alternative to the normal Portuguese style salted sardines.
Ingredients
8-12 fresh sardines, gutted, scaled and washed
8-12 sprigs of fresh oregano
90ml olive oil
Juice & rind of 2 lemons
Salt & pepper
1 tbsp dried oregano
Method
- Dry the sardine then place a spring of oregano inside each fish. Then make 2 slits on each side of the fish.
- Mix together the oil, lemon juice, salt & pepper. Brush the fish both sides with this marinade.
- Grill over a hot BBQ for 3-4 minutes per side, basting frequently with the marinade.
- When the fish are nearly cooked sprinkle the dried oregano over the coals, this will give the fish extra flavour.
