These could be served as a starter or main course and are a flavourful alternative to the normal Portuguese style salted sardines.

Ingredients BBQsardines

8-12 fresh sardines, gutted, scaled and washed
8-12 sprigs of fresh oregano
90ml olive oil
Juice & rind of 2 lemons
Salt & pepper
1 tbsp dried oregano

 

Method

  1. Dry the sardine then place a spring of oregano inside each fish. Then make 2 slits on each side of the fish.
  2. Mix together the oil, lemon juice, salt & pepper. Brush the fish both sides with this marinade.
  3. Grill over a hot BBQ for 3-4 minutes per side, basting frequently with the marinade.
  4. When the fish are nearly cooked sprinkle the dried oregano over the coals, this will give the fish extra flavour.

Serve immediately with fresh bread and a cold beer...aah summer in Portugal.
