This is a great way to use up your spare tomatoes and chillies and makes a qiick meal. It takes about 30 minutes total to make and you can make it in bulk and freeze portions.
Ingredients 
500g minced beef (carne picada)
500g copped peeled tomatoes
1 can/jar white beans, drained, rinsed
1 can/jar red kidney beans, drained, rinsed
500ml Tomato Pulpa
250ml beef stock (stock cube and hot water for cheats)
1 -2 fresh chillis, deseeded and chopped
salt and pepper
Method
- Brown the meat in large pan over medium-high heat. Add all other ingredients and stir until well mixed.
- Bring to the boil then turn down and cook over medium heat for 10-15 minutes, or until heated through, stirring occasionally.
- Add a little water if its too dry.
- Add salt and pepper to taste.
To Serve
Serve with boiled white rice, or crusty bread.
Additional Notes
This can be frozen, make sure it is fully re-heated before serving.
Serve with fresh home made beer bread for a real meal.
