Hummus
A really easy and healthy recipe. Great to make with your own Olive Oil and freshly picked lemons.
Ingredients
400g jar of chickpeas or Grao do bico
4 tablespoons liquid from jar of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil
Method
- Drain the chickpeas and set aside some of the liquid.
- Combine the remaining ingredients in a hand blender or food processor.
- Add 1 tbsp of liquid from chickpeas.
- Blend for 3-5 minutes on low until thoroughly mixed and smooth, adding more of the drained liquid as needed to get your preferred texture.
- To serve place into a bowl and sprinkle with parsley or paprika, to your own taste. Serve with vegetable strips, crisps or pitta bread to dip.
