Fish with Pesto Roasted Peppers and Tomatoes
This recipe is simple but very tasty and filling.
This recipe is simple but very tasty and filling, it can be cooked on a BBQ or in the oven, depending on the time of the year.
Ingredients
1 Jar or quantity of Pesto Sauce4-6 Fresh Fish (your choice)
8-10 garlic cloves, sliced (2 per fish)
Bunch of Lemon Balm or Parsley
2 large red peppers
4-6 large ripe tomotoes
Method
1. Make up a quantity of fresh Pesto or use 1 standard jar of prepared Pesto.
2. Wash and salt the outside of the fish, stuff with garlic cloves, Lemon Balm/Parsley
3. Place fish on BBQ to cook
4. De-seed the peppers and tomatoes. Cut into segments, and arrange on double folded aluminium foil sheet
5. Fill the hollows of the peppers and tomatos with the pesto sauce
6. When the fish is cooked....on both sides, take off BBQ and put aside
7. Place peppers and tomatoes on BBQ (it needs to be hot enough to roast them)
Additional Notes
This can be served with a Green Salad and fresh crusty bread, (warm it on the BBQ) or Boiled New Potatoes.
